Want to taste something really scrumptious? This is it! I dropped by my Mother’s the other night. She and her friend were eating tomato pie. I’d never even heard about this dish and had to have a bite! Well, one bite was not enough, but I minded my manners and didn’t infringe on her company, but, I immediately emailed her and asked (no begged) for the recipe! This stuff is divine!
When I made this I made two! I invited a couple of friends over and wanted to have plenty…for me! It was a big hit and, of course, they wanted the recipe too! I told them to look for it on here!
This is a great go to week night meal because it’s so simple AND delicious!
- Pie curst
- Whole Garlic (roasted in the oven)
- 2 Tomatoes
- Salt & Pepper
- Shredded Cheese (Mozzarella, Asiago, Parmesan, use several kinds or just one)
- Basil (I use this, but she doesn’t in the tutorial)
Smash the cloves of garlic, as you squeeze them out of the pod, onto the bottom of the cooked pie crust. Slice the tomatoes and put them on paper towels to absorb the extra juice, then start layering your ingredients on top of the garlic, tomatoes first, cheese, tomatoes and cheese. Pop it in the oven and your done! How easy is this?
