Coconut Raspberry Smoothie Recipe

Smoothies for breakfast are my new thing. I love that I can work and have breakfast at the same time without worrying that anything is going to get dirty. A friend recently bought an immersion blender for me at Costco (they were on sale for $20!!!) and I have used it almost every day since. I always loved a good smoothie but rarely made them. I found that hauling out the blender, taking it apart afterwards, and washing it was just too much of a hassle. Now smoothies are what I’m having for breakfast almost every single day.

Everyone loves a nice pink smoothie, especially for Valentine’s Day. You won’t be disappointed with this one. Give it a try and let me know what you think!

Coconut Raspberry Smoothie Recipe


-3/4 cup frozen raspberries

-1/4 of a can of coconut milk (I try to use the lowfat kind if I can find it. You already get the creaminess from the yogurt, you just want the coconut flavor.)

-1/2 cup plain greek yogurt (I use the Kirkland 0% fat kind. If you currently eat regular yogurt instead of greek I highly suggest making the switch. The difference in protein between regular yogurt and greek yogurt is staggering.)

-1/3 cup milk

-2 tablespoons ground flaxseed- optional (I use Spectrum Cold Milled Ground Premium Flaxseed With Mixed Berries. I love the extra berry flavor that the bits of blueberry, strawberry and cranberry add to the smoothie. This smoothie actually tastes better to me with the flaxseed in it then without because of those berry bits.)

-1 teaspoon of honey or other sweetner- optional


Combine all of the above ingredients, blend, pour in a glass and serve.

You will not be disappointed in this smoothie. It is so good.

A few notes-

1. I never actually measure the ingredients. Just eyeball it.

2. If you have never used an immersion blender to make a smoothie I highly recommend it. I didn’t realize you could use an immersion blender for smoothies. Just put your ingredients into a high walled plastic container then immerse you blender into it. Pulse a few times and you are done. You could even drink it out of the plastic container if you didn’t want to dirty up a glass. 😉
